Ingredients:
2 cups dried white beans, cooked
OR
2 cups canned white beans,
liquid reserved
1 teaspoon mustard powder
1 teaspoon salt
4 tablespoons brown sugar
3 tablespoons molasses
1 tablespoon oil
1 small onion, chopped
1/4 lb salt pork

Directions:
If using dry beans, soak them overnight.
Drain the water off and reserve it, then measure water and add to it to equal 3 1/2 cups.
Mix salt into the water.
Heat the oven to 350 degrees F.
Place the beans in a bean pot.
Sauté the onion in the oil until it is clear, then mix together with the mustard, molasses, and brown sugar.
Stir the salt water into the spice mixture, then stir it all into the beans.
Score the salt pork on top and place it on the bean mixture, then cover it with a layer of beans.
Bake the beans covered for one hour, then reduce the heat to 300 degrees F and bake for four more hours.
Uncover the beans and cook for another hour. (Check the beans during the last two hours - you may need to add a little more water).
Season to taste with more sugar, molasses, or salt.
