Ingredients:
Servings: Serves 2 - 3 people
1 lb. beef boneless sirloin steak
1 tablespoon cornstarch
1 tablespoon vegetable oil
1 teaspoon salt
1 teaspoon sugar
1 teaspoon soy sauce
dash of white pepper
1 green onion, with top
3 tablespoons vegetable oil
1 teaspoon gingerroot, finely chopped
1 teaspoon garlic, finely chopped
1 tablespoon soy sauce
fried rice threads

Directions:
Trim the fat from the beef and cut it into 2" strips (with the grain).
Cut the beef strips across the grain into 1/8" slices.
Toss the beef, oil, cornstarch, soy sauce, sugar, salt, and pepper into a bowl, then cover and refrigerate for 1 hour.
Cut the green onion into 2" slices.
Heat the wok until 1-2 drops of water bubble and skitter around when sprinkled into it.
Add the 3 tablespoons of vegetable oil, rotating the wok to coat the sides.
Add the gingerroot and garlic, then stir fry until brown.
Add the beef and stir fry until it's brown, for about 3 minutes.
Add the remaining soy sauce and stir to coat the beef.
Add the green onion and stir fry for 30 seconds.
Serve over the fried rice noodle threads.
