Ingredients:
Servings: Serves 8 people
1 1/2 lb lean hamburger
1 1/2 lb rye bread crumbs
2 eggs, lightly beaten
1/2 cup onion, chopped
1/4 cup Russian salad dressing
1/3 cup pickle relish
1 TBS Worcestershire sauce
1 tsp salt
1/4 tsp pepper
1 (8oz) can sauerkraut, drained
1 1/2 cups Swiss cheese, shredded
6 thin slices of corned beef
|
Directions:
Combine the hamburger, bread crumbs, eggs, onion, pickle relish, Russian dressing, Worcestershire sauce, and salt and pepper.
Mix well with your hands or a wooden spoon.
On a sheet of foil, shape the mixture into a 7"x14" rectangle.
Evenly layer the corned beef, sauerkraut, and cheese, leaving a 1-inch border around the edges.
Roll up the meat in a jelly roll fashion, sealing the ends, using the foil to help lift.
Place the seam-side down in a loaf pan and bake at medium heat for about 45 minutes.
Bake for 1 hour at 350 degrees F in your kitchen oven.
