Ingredients:
1 Slice dried galanga, soaked for
20 minutes
3 stalks fresh lemon grass
2 Kaffir lime leaves
2 medium stalks coriander, with roots
5 Guinea peppers, lightly pounded
with a mortar
1 tbs roasted chili sauce
6 cups Chicken stock
10 oz medium shrimp, shelled
1 oz straw mushrooms
2 tb fish soy
1 1/2 tb sugar
lemon juice

Directions:
Place all the soup ingredients (except last three) in a pot over medium heat. Boil for 5 minutes.
Add the shrimp and mushrooms, then just return to a boil.
Mix in the seasonings.
Garnish with the green onion.
